Leaning into this, Dark Matter Coffee has created a fruitier, blue-inspired play on their Unicorn Blood blend. Unicorn Blood is known to have bright acidity and a rich body that is delicious and plays well with milk.
The espresso blend fluctuates over the year as we move through the harvest cycle, with this iteration utilizing a washed Colombia coffee that some of you who have been around for a bit may recognize, from Pergamino's farm, Santa Barbara.
We plugged in a naturally processed Bourbon from El Salvador to bring more punch to the blend, and continue to keep a Timor genetic in the blend with Sarchimor from El Rosario as a component.
